India is endowed with diverse Agro-climatic conditions that provides conductive environment for cultivation of wide range of horticultural crops, which includes fruits, vegetables, spices, plantation crops, and flower crops. The horticulture sector is highly potential to enhance our agricultural production and also it gives us nutritional security. Coming towards the spice crop of Ginger(Zingiber officinale) India accounts 70% of total world production and 50% in world export in garlic. Kerala is the leading producer of ginger. Ginger is very well known for its anti nausea effects. Garlic (Allium sativum) being a bulb crop ranks 3rd in production in our country. It contains antibacterial substance name Allicin which works wonders for our health.

Here is delicious recipe of Ginger and Garlic soup to overcome common problem of cough and cold for this ingredients needed are :- Two cloves of garlic, peeled and finely diced, Four green onions, also finely sliced, Seven cups of chicken stock or broth (for vegetarians – vegetable stock), 50g of grated root ginger, finely sliced too, And last but not least, one finely diced hot or medium-hot chili, Chopped or whole mushrooms (optional), 1 tomato chopped, 1 carrot chopped, 2 tbsp. corn flour, salt to taste, Black pepper powder to taste.

Steps for soup preparation :- Heat 1 tbsp. oil in a pan and sauté ginger and garlic, Add chopped tomatoes and carrots and sauté for 2 min, Add water as per density as per quantity of soup you want, bring it to boil add salt and black pepper powder . Cover the pan and let it cook for 5 min, Make corn flour slurry by mixing corn flour with water , stir well and add corn flour slurry to the soup and cook for other 2-3 min. Serve hot!
